I first fell in love with Red Velvet cupcakes at Hummingbird bakery in Notting Hill, London. The gorgeous little place would be easy to miss if it wasn’t for the masses of people lining up every Saturday to get their hands on the American-style cupcakes, the best sugar hit on Portobello Road.
When an email came around work about a Christmas brunch, the first thing I wanted to make was cupcakes. There is something just so special about them, sickly sweet but small enough to enjoy without overindulging too much. Hey, what is more Christmas-y than bright red cupcakes with white cream cheese frosting?
Of course the kitchen turned into an absolute disaster zone after I used 2 bottles of red food colouring (no one said it was healthy) and I was almost too scared to pick up the camera in case it got butter or flour on it. I love to bake but am really not the cleanest in the kitchen.
The batter was much more red than it looks in these photos – more like an old English post box.
Despite a few odd ones they turned out really well – but unfortunately the trip to work wasn’t so successful. Lucky there were extras!
