Monday Munchies – Quinoa Porridge

Though I have been in a bit of a routine of eating oat porridge each morning for breakfast, I thought it would be good to have another option to change it up a bit, and having heard a lot about quinoa porridge I decided to give it a go.

Quinoa is pronounced ‘Keeen-wah’ and is a seed, despite being used like a grain. It comes both as the whole seeds – which are great for salads and hot dishes and as rolled flakes – such as I have used for this breakfast dish.

Monday Munchies – Vegan Mother’s Day Brunch

I know this post is a little delayed since Mother’s day was around a month ago, but I thought it would be fun to share the brunch we made for Mum this year.

As Mum has recently switched from vegetarian to (mostly) vegan, coming up with a tasty brunch menu was a challenge at first – as I had to move away from the idea of eggs and dairy, while trying to stay away from too much bread and pastries.

Monday Munchies – Banana Pancakes

How good does it feel when you discover a recipe that is not only delicious, but also super healthy? If you aren’t familiar with the feeling then you need to get over to My New Roots and start browsing Sarah’s recipe collection.

Without fail, every time I am searching for a guilt free treat, I can find what I am after on My New Roots.  These banana pancakes are both vegan and gluten free and full of healthy protein and fats from nuts. I altered the original recipe to suit what I had in my pantry, substituting the walnuts for a combination of brazil nuts and pecans.  The first time I made these I didn’t have any nut milk on hand, and was feeling a little lazy so I used regular milk with great results, but I felt so much better the second time when I made the effort to make them with nut milk so that they were vegan.

Monday Munchies – Hazelnut and Raw Cacao Butter

Walking into our kitchen smells like autumn.  The aroma of hazelnuts toasting on the stove reminds me that Easter has come and gone, that the days have become cooler and the blazers have been pulled to the front of my closet.

There is something about hazelnuts that is reminiscent of childhood, and so many people’s favourite spread, Nutella.  When I bought some for crepes recently and read the label, I realised why mum had never given it to us as kids.  It is choc full of sugar and ingredients that I am currently trying to avoid, so I thought I would attempt to create my own version, using raw cacao.

Since we are on uni holidays, I thought it would be a good opportunity to have a bit of a diet overhaul and focus on eating much more salad and drinking plenty of veggie juice, in between reading medico-legal articles, writing assignments and savouring the last bits of warm weather with breaks to swim in the ocean.

One of the most challenging things to cook, I think, is an authentic tasting Indian curry.  Having never been to India, I have no idea if what I think is authentic actually is authentic, but I know that I have tried many times to replicate the flavours of our local Indian takeaway, failing every time.
