Breakfast: Fridge Oats

Lately I have felt extremely time-poor, so have been looking for ways to get organised and streamlined in the kitchen, while still maintaining a healthy diet.

I have seen ‘refrigerator oats’ on a few blogs and on pinterest, and although a Bircher muesli type breakfast soaked overnight isn’t a new concept for me, the idea of pre- preparing and serving breakfast in mason jars made me keen to give it a try.

Reflections on 8 Weeks Sugar Free & Healthy Lunch Recipe

It’s amazing how fast time flies, I can hardly believe that our 8 weeks is finished, it has now been about 10 weeks since we started Sarah Wilson’s ‘I Quit Sugar’ program.  For the first 6 weeks we stuck fast to the plan, and although it was a challenge at times it was an excellent learning experience that I would highly recommend.

Roast Beet, Carrot and Orange Salad

Though the weather is warming up a little and signs of summer are starting to break through, the evenings are still cool and perfect for a meal involving roasted veggies.

The combination of the crisp roasted carrots and beets with the citrus punch in this salad works well as an accompaniment to almost any main, and also stands alone as a delicious meal, particularly with a bit of added goats cheese and a crusty bread.

Winter Salad – Asian Style Wild Rice Salad

Despite cravings for hot soup with crusty bread and rich filling foods to warm up evenings that have become chilly, I atom still aiming to eat healthily, even over winter. In order to achieve that, I need to ensure that I have sufficient inspiration for winter style salads, since the usual salad leaves plus extras just aren’t as satisfying as they are during hot weather.

Monday Munchies – Quinoa Porridge

Though I have been in a bit of a routine of eating oat porridge each morning for breakfast, I thought it would be good to have another option to change it up a bit, and having heard a lot about quinoa porridge I decided to give it a go.

Quinoa is pronounced ‘Keeen-wah’ and is a seed, despite being used like a grain. It comes both as the whole seeds – which are great for salads and hot dishes and as rolled flakes – such as I have used for this breakfast dish.
